Hi Dave - soz it took me a while to get here (I run my own site, which eats my time away !)
Anyway : the argument about whether RGB or S-Video is best could rage for several months. I prefer RGB myself, mainly because it is considered a more pure signal than S-Video (which, as correctly stated above, splits the signal into brightness and colour), and splits the signal into the primary colours (red, green, blue - sorry if that seems patronising !).
The RGB picture seems brighter to me, but then the S-Video one is OK too.
As for connecting the S-video 4-pin plug from DVD to TV AV3 - by all means go for it, especially if you`ve got your DVD player hooked up to an amp. If not, then you won`t get any sound from your TV, unless you keep the SCART between the DVD and the TV, as the S-video cable is PICTURE only !
Take your point about a complicated set up : play around with it and see which picture suits you best - I`d certainly give RGB through the SCART a whirl as well and see what you like best.
